Pulled Duck and White Bean Salad
Tender pulled duck meat and a dressing flavored with sherry wine vinegar make this recipe perfect for entertaining.

38 oz. Canned White Cannellini Beans, drained and rinsed

3/4 cup Chopped Green Olives

1 Red Pepper, Roasted, Peeled, Seeded, and Diced

1 Cucumber, Peeled, Seeded, and Diced

1/2 cup Diced Red Onion

14 oz. Canned Diced Tomatoes, Drained

1/2 cup Chopped Fresh Parsley

3 Tbsp. Sherry Wine Vinegar

1/3 cup Olive Oil

12 cups Spring Lettuce Mix

Vinegar & Oil Dressing

To Taste Salt & Pepper
Directions

Whisk together oil and vinegar dressing.

Add all ingredients except duck in a large mixing bowl. Add oil and vinegar dressing.

Toss gently and season with salt and pepper.

Place 2 cups of dressed spring lettuce on a plate. Top with 1-1/2 cups white bean salad. Top with duck. Sprinkle with Parmesan cheese.
