Chicken... No Wait! Duck Tenders

One of the most intimidating things about duck meat is that it doesn’t look like other poultry. Instead, it shares more characteristics with red meat. It bridges the divide of poultry and beef with a taste that is all its own! The only real similarity between duck meat and chicken meat is that duck can replace any dish that requires chicken as a protein making duck a great and healthy alternative to basic meat choices like chicken.
One way that duck can be substituted for chicken is with a popular way of preparation, especially for the kids but the adults can enjoy it just as much! Duck tenders are exactly what they sound like. Breaded with bleached wheat flour, yeast, sugar, and salt, these duck tenders are a great choice for that missing crunch in a salad or appetizer.

Duck Parmesan
Ingredients
- 1 lb. Breaded Duck Tenders
- 1 jar marinara sauce
- 1 box spaghetti noodles
- 1 cup parmesan
- 1 tsp. Oregano
- 4 cloves garlic minced
- 1 shallot finely diced
- 1 tsp. olive oil
- Fresh basil
Directions
- Heat oven to 400 degrees. Place Breaded Duck Tenders on pan and cook according to packaging directions.
- While the duck is in the oven, boil the pasta until el dente.
- In a medium saucepan, heat pan and olive oil to a medium-low temperature then stir in the garlic and onions for 1-2 minutes.
- Add sauce and oregano and let simmer until duck is done.
- To serve - place noodles in bowl then drizzle a layer of sauce over them. Place duck pieces on top and drizzle another layer of sauce and top each bowl with ¼ cup parmesan or as much as you desire. Serve with fresh basil on top.
