What’s the difference between popular duck breeds?
White Pekin Duck
White Pekin ducks make up about 95% of duck consumptions in the U.S. Due to the breed’s adaptability and mild flavor, Pekin duck is the perfect option to include in your favorite dishes and pairs with a variety of tastes and flavors. These ducks are generally raised for 4-6 weeks for optimal tenderness.
Mallard Duck
When you think of duck, you probably picture Mallard ducks. Most commonly found on lakes and rivers, these wild ducks are rarely farm-raised and therefore are not commonly used in duck recipes. Mallards are smaller and tougher than other duck breeds meaning there is less meat, and the meat is more difficult to prepare due to its texture. Cooks also have to account for Mallard’s gamey flavor that comes from the varying diet they consume in the wild.
Muscovy Duck
Muscovy duck represents about 3-4% of U.S. duck consumption. This duck breed, which is popular in parts of Europe, is often grown for foie gras and breast meat. Muscovy ducks take longer to grow -- about 11 weeks. And, Muscovy duck meat is harder to prepare and has a much stronger, gamey flavor, making it less appealing to American consumers.
Moulard Duck
The only crossbreed duck on this list, Moulard is the result of crossbreeding a male Muscovy and female Pekin. Much like Muscovy, Moulard has a gamey flavor and is raised mainly for foie gras.
What About Other Proteins?
Not only is duck easy to prepare, but it is very versatile and unique, lending any meal a sense of sophistication and something special. And, it has advantages when compared to other specialty proteins.
When compared to lamb and bison, which can be gamey and higher in fat, duck is a healthier option that more easily fits into a variety of cuisines and flavor profiles. Other options like rabbit and quail can be more challenging to cook and much more difficult to find than duck, which is widely distributed throughout the country.
