Low-Carb Duck Stuffed Mini Peppers

Ingredients

1 Roast Half Duck, Defrosted

4 oz. light Cream Cheese, softened

4 oz. light sour cream

½ cup fat free Shredded Cheddar Cheese

1 bunch green onions, thinly sliced

10 mini peppers

1 tbsp. olive oil

Preheat oven to 375 degrees and bake Roast Half Duck for 15-20 minutes.

Finely shred roast half duck. Save ¼ cup back for topping.

Mix remaining roast half duck with cream cheese, sour cream, cheddar cheese and green onions.

Slice mini peppers in half and remove the seeds and membranes. Brush them lightly with olive oil.

Stuff peppers with duck and cheese mixture. Top with remaining roast half duck.

Bake at 400 for 10-15 minutes.
