Duck Bacon Caesar Salad
A crowd favorite, made with Duck Bacon! Nothing out of the ordinary for this classic salad. Using duck bacon is a great and healthier alternative to more traditional bacons.

Ingredients

4 Pieces of Duck Bacon, defrosted

1 Romaine Lettuce Head, chopped

¼ Cup Olive Oil

6 cloves garlic, minced

3 tbsp. red wine vinegar

1 tbsp. Dijon mustard

1 tsp. Worcestershire sauce

1 egg, whisked

Juice of 1 lemon

1 tsp fresh ground pepper plus more for garnish

Pinch of salt

1/2 Cup of grated parmesan

1/2 cup croutons

¼ cup parmesan shavings

Heat skillet over medium-high heat. Place a single layer of duck bacon in skillet. Cook 2-4 minutes per side. Remove bacon and let cool on paper towel.

Chop Duck Bacon into crumbles.

In a large salad bowl, mix olive oil, garlic, red wine vinegar, Worcestershire, Dijon, egg, lemon juice, pepper, and salt together to make a Caesar vinaigrette. Mix in grated parmesan.

Dip croutons in vinaigrette dressing and coat. Place croutons in a separate bowl and let soak for 5 minutes.

To the salad bowl with the Caesar dressing, add romaine, duck bacon crumbles, and the soaked croutons. Toss thoroughly.

Serve duck bacon Caesar salad in individual bowls with shaved parmesan and cracked pepper on top.
