Duck Breakfast Pizza
Make pizza into a breakfast item with this hearty, kid-friendly dish. This recipe works great with a variety of duck products.
Ingredients

5 - 10 slices Maple Leaf Farms Smoked Duck Bacon
(Roast Half Duck, Pulled Duck Meat, or Boneless Duck Breasts can be substituted.)

4 Prepared Pizza Crusts, 6"

1 1/2 cups Cheddar Cheese, shredded

1 Red Pepper, roasted and coarsely chopped

1 cup Green Pepper, coarsely chopped and sautéed

1 cup Mushrooms, coarsely chopped and sautéed

1 cup White Onion, coarsely chopped and sautéed

4 Eggs

2 Green Onions, 1/4" diagonal slice

Preheat oven to 400°F. Cook duck bacon according to package directions and chop into 1-inch pieces. Set aside.

Sprinkle 3/4 cup cheese on crusts. Top each crust with red peppers, green peppers, mushrooms, white onions and duck bacon.

Make a small well in the center of each pizza and crack one egg in each. Sprinkle with the rest of the cheddar cheese.

Place on sheet pan and bake for 8-10 minutes, until egg is cooked to sunny side up.

Sprinkle with green onions and serve immediately.
