Ingredients

3-4 Cups Duck Fat

3 Sweet Potatoes

¼ Cup Corn Starch

Water
-
Salt and Pepper to Taste

Optional: Goat Cheese and Thyme for garnish
Directions

Peel sweet potatoes and cut into ¼ in” sticks.

Soak sweet potato sticks in a large bowl of ice water for 30 minutes.

In a large plastic bag, combine the cornstarch with 1/3 cup water. Mix well.

Remove the sweet potato sticks from the water and place into the cornstarch bag then turn and shake to coat.

In a large pot or Dutch oven, melt Duck Fat at medium-high heat and fry the sweet potatoes for 3 minutes.

Remove and let set on paper towel to dry and cool for 3 minutes.

Place in duck fat fry again for 7 min or until crispy brown.

Toss with salt and pepper and serve. Optional: top with goat cheese crumbles and thyme.
