Duck Fried Rice
This deliciously savory dish is simple, yet full of flavor! With the simple few ingredients of rice, Roast Half Duck, and a few other elements, this is the perfect dish for days!
Ingredients

1 Roast Half Duck, defrosted

2 Cups White Rice, Cooked

3 Tbsp. Vegetable oil.

2 Tbsp. Soy Sauce

2 Tbsp. Rice Wine Vinegar

1 Tbsp. Hoisin

3 Carrots, finely diced

½ Cup Yellow Onion, finely diced

2 Cloves Garlic, minced

1 Tsp Ginger, grated

1 Egg

1 Bunch Scallions, finely diced

Preheat oven to 375 degrees. Bake roast half duck in a shallow baking pan for 15 minutes. Alternatively, you can also air fry the roast half duck at 390 degrees for 12 minutes for a quicker cooking time.

Shred Roast Half Duck into bite sized pieces.

Bring a large skillet or wok to medium high heat with 1 tbsp. vegetable oil. Cook carrot, white onion for 5 minutes. Add in garlic and ginger for the last minute.

Add a drizzle of oil to the pan and add duck pieces and cook for 2 minutes.

Add remaining oil to pan and white rice. Toss everything together and fry rice for 5 minutes, continuously stirring and scraping the brown bits in the pan up.

Make a hole in the center of the pan. Scramble the egg and mix into the rice mix.

Mix in soy sauce, rice wine vinegar, and hoisin then cook for 3-5 more minutes. Remove from heat.

Toss scallions into duck fried rice and serve.
