Duck Pizza with Leeks and Garlic

1 Head Garlic, separated into cloves

1/4 Cup Olive Oil

2 Leeks, julienne in 2" strips

8 Ounces Basic Pizza Dough

As Needed Cornmeal

Preheat the oven and pizza stone or tiles to 500 degrees 1 hour before use. Combine the garlic cloves and 1/4 cup of the olive oil in a small saucepan. Cover and cook over moderate heat until garlic is soft, 20-30 minutes. Pass through a food mill or fine mesh sieve. Discard skins; reserve puree.

In a medium skillet, saute the duck breast, skin side down, over moderately high heat until skin is browned, about 8 minutes. Pour off excess fat. Turn the breast and saute until lightly browned on the bottom, about 3 minutes.

Remove the duck from the skillet; when cool enough to handle, remove the skin. Slice the duck breast into thin strips. Season lightly with salt and pepper, cover loosely and set aside. Cut the skin into thin strips and return to skillet. cook over moderate heat until the fat is rendered and the skin is crisp, about 20 minutes. Drain the cracklings on paper towel.

Toss the leeks with the remaining 1 tablespoon olive oil; season lightly with salt and pepper.

Roll out pizza dough into 2 pizzas. For each pizza, dust a baking sheet with cornmeal and lay the dough on top. Spread half of the garlic puree over each pizza crust.

Reserve 2 tablespoons of cracklings for garnish; sprinkle the remainder over the garlic puree. Reserve 2 tablespoons of leeks for garnish; divide the remainder between the 2 pizzas.

Slide the pizza onto the hot pizza stone. Bake in oven for 5-7 minutes. remove from oven and arrange the duck slices on top. Continue baking for 3 minutes, until the duck is warmed through and the bottom crust is browned. Top with reserved cracklings and leeks before serving. Garnish with shredded lettuce, if desired.
