Duck Quesadilla
There is nothing better than cheese, beans, and duck all seasoned with an array of spices melted together in between a tasty tortilla! Top this classic recipe off with a cilantro lime crema drizzled on top.
Ingredients

12 oz. Ground Duck

½ Cup onion, diced

2 cloves garlic, minced

1 tsp. salt

2 tbsp. chili powder

1 tbsp. cumin

½ Cup refried beans

2 large flour tortillas

1 Cup chihuahua cheese

3 tbsp. sour cream

1 tbsp. lime juice

1 tbsp. cilantro finely diced

Heat pan to medium high heat. Sauté ground duck with onion for 5 minutes. Add garlic and sauté for 1-2 minutes more.

Mix in salt, chili powder, and cumin. Add refried beans and mix well to combine. Let simmer for 5 minutes.

In a large pan, heat a spray of oil and add large tortilla. Add half the duck and bean mixture then top with half of the cheese. Fold quesadilla over and cook for about 3-5 minutes until cheese melts, flipping halfway through.

Mix sour cream, lime juice, cilantro, and a pinch of salt to make cilantro lime crema.

Cut up quesadilla into wedges and serve with cilantro lime crema drizzled on top.
