Duck Smash Tacos

12 oz. Ground Duck

¼ Cup Panko

¼ Cup Sweet Onion, Diced

1 Tbsp. Chili Powder

1 Tbsp. Cumin

4 Tortillas

4 Slices Cheddar Cheese

Shredded Lettuce

Sliced Pickles
Sauce

¼ Cup Mayonnaise

1 Tbsp. Relish

2 tsp. Yellow Mustard

1 Tbsp White Vinegar

½ tsp. Paprika
-
¼ tsp. Garlic Powder

¼ tsp. Sea Salt

Preheat your griddle to medium high heat.

Mix Ground Duck with panko, onion, chili powder and cumin. Separate the mix into 4 balls.

Place the duck meat balls on the griddle and smash them down with a tortilla and a weight. Let cook for 5 minutes.

While tacos cook, mix mayo, relish, mustard, vinegar, paprika, garlic powder, and sea salt to form our burger sauce.

Flip the smash tacos and place a slice of cheese on top of each taco. Let cook for 2 more minutes.

Top each smash taco with shredded, lettuce, pickles, and burger sauce.
