Fire Cooked Whole Duck

Ingredients

1 Whole Duck, Defrosted

1 Tbsp. Salt

1 Tbsp. Paprika

½ Tbsp. Chili Powder

½ Tbsp. Cumin

1 Tbsp. Pepper

Preheat your fire or grill to medium-high heat. Add a grill plate if you are using an open fire.

Remove whole duck from bag. Discard giblets. Remove the backbone by cutting up both sides of the duck’s backbone with poultry shearers.

Combine salt, paprika, cumin, chili powder, and pepper. Sprinkle on all over the duck inside and outside. Press to adhere.

Lay the duck on the grill grate skin side down and cook for 20 minutes, rotating every 5 minutes.

Flip and let cook for 25 more minutes or until internal temperature at the leg joint is 180 degrees F.

Let rest for 5-10 minutes. Carve and serve.
