Air Fryer Duck Breast

Ingredients

2 Duck Breast, Defrosted (Tip – our marinated Roasted Garlic Duck Breast works great for this recipe!)

½ Lb. Brussel Sprouts

½ Lb. Baby Red Potatoes

2 Tbsp. Olive Oil

1 tsp. Kosher Salt, Divided
-
Fresh Black Pepper
-
2 tsp. Garlic Powder
-
½ tsp. Paprika
-
1 Tbsp. Parmesan

1 Cup Balsamic
Directions

Score Duck Breast skin in 1/4" intervals, being careful not to cut into the meat. Rotate breast and score again, making a crisscross pattern. Sprinkle duck breast with salt and pepper to your liking.

Trim & halve Brussels sprouts. Place Brussels sprouts in a large bowl full of warm water and let soak for 10 minutes.

Place balsamic in a pan on medium heat and reduce for 20 minutes.

Preheat air fryer to 400 degrees F. Place duck breast skin side down in air fryer.

Cook in air fryer for 10-15 minutes. Cook until the internal temperature reaches 165 degrees F with a meat thermometer.

In the meantime, cut baby red potatoes in half and toss with 1 Tbsp. Olive Oil, paprika, 1/2 tsp. Kosher Salt, 1 tsp. Garlic Powder and ½ tsp. onion Powder

Drain Brussels sprouts from water. Toss Brussels sprouts with remaining olive oil, 1 tsp. Garlic Powder, ½ tsp Kosher Salt, and fresh cracked black pepper.

Take Duck Breast out and let rest under foil for 5-10 minutes.

Place Brussels sprouts and red potatoes in air fryer at 400 F for 15 minutes, flipping halfway through.

Thinly slice duck breast and fan each breast out on a plate. Divide Brussel sprouts and red potatoes between the two plates. Top Brussels and duck with balsamic glaze then top Brussels with parmesan. Serve immediately.
