BBQ Cheddar Duck Burgers

Ingredients

1.5- 2 Lbs. Ground Duck

4 Tbsp Panko Breadcrumbs

1 Tbsp Raw Onion, Minced

1 tsp Garlic, Minced

Coarsely Ground Salt and Pepper, to Taste

1 Sweet Onion, Thinly Sliced

½ tsp. Salt

1 Tbsp. Butter
-
2 Tbsp. BBQ Sauce

4 Hamburgers Buns (Preferably Ciabatta or Onion)

4 Slices of Cheddar Cheese
-
4 Slices of Bacon

Arugula for Garnish

Preheat grill to medium high heat.

In a pan on the stove top on medium high heat add sweet onion slices, ½ tsp. salt, and butter. Let onions caramelize for 25-30 minutes, stirring occasionally and bringing the temperature down as needed.

Mix Ground Duck, bread crumbs, onion, and garlic in a bowl and let sit 10 minutes.

Form 4 patties from mixture and generously coat with salt and pepper.

Add patties to the grill and cook for 5-7 minutes on each side or until internal temperature reaches 165 degrees F. In the last few minutes, add on cheddar slices to melt.

Cut bacon slices in half and cook in a frying pan or on the grill. (Watch carefully for flare ups.)

Cut buns in half and toast on the grill.

Place burgers on buns and top with BBQ sauce, caramelized onions, bacon slices, garnish with arugula then serve.
