Duck Meatloaf
Warm up on a cozy fall night with Duck Meatloaf! Our Ground Duck is blended with oats, tomato puree, fresh parsley, and onions cooked in Duck Fat to create a delicious comfort food classic.

Ingredients

1.5 lbs. Ground Duck

1 Tbsp. Duck Fat

½ Cup Chopped onion

¼ Cup Panko

½ Cup Oats

½ Cup Tomato Puree or Crushed Tomatoes

2 Tbsp. Fresh Parsley, Chopped

½ tsp. Salt

½ tsp. Ground Pepper

1 tsp. Dried Italian Seasoning

4 Cloves Garlic, Minced

Preheat oven to 350 degrees F.

Heat Duck Fat in pan and sauté the chopped onion for 5 minutes.

Mix the Ground Duck, cooked onion, garlic, ¼ cup tomato puree, oats, panko, parsley, salt, pepper, and Italian seasoning together in a large bowl.

Lightly grease a pan and shape the meat mixture into a loaf on the pan.

Spread the remaining tomato puree on top of the loaf.

Bake for 1 hr. and 15 min or until loaf reaches 165 degrees F. Let cool, cut into slices, and serve.
