Duck Smash Burgers

Ingredients

24 oz. Ground Duck

½ Cup Panko

6 Cloves Garlic, Minced

8 Slices American Cheese
-
4 Brioche Buns
-
Kosher Salt

Fresh Ground Pepper

2 Tbsp. Mayonnaise

1 Tbsp. White Vinegar
-
½ tsp Thyme
-
Equipment: Parchment Paper and a weight

Preheat your griddle to medium high heat.

Combine Ground Duck, panko, and 4 cloves of minced garlic. Season with salt and pepper.

Divide into 8 even round balls.

Place a few balls on the griddle at a time. Cover with parchment paper and smash with a weight.

Let cook for 1-2 minutes then flip. Season again with salt and pepper then top with a slice of cheese and cook for 1 more minute. Repeat for each burger.

While burgers rest, toast buns in the duck burger fat for 1 minute per side.

Mix the remaining garlic, mayo, vinegar, and thyme to make garlic aioli.

Assemble burgers with 2 smash patties per burger with garlic aioli on top nestled between the buns.
