Duck Stuffed Bell Peppers
Delicious bell peppers stuffed with Ground Duck, tomatoes, rice, and cheese. This is an easy and healthy option for a weeknight dinner!

Ingredients

12 oz. Ground Duck

6 Large Bell Peppers

2 Tbsp. Olive Oil

1 Medium Onion, Diced

2 Tbsp. Tomato Paste

4 Cloves Garlic, Minced

1 Can Diced Tomatoes

1 tsp. Dried Oregano

1 tsp. Dried Basil
-
1 tsp. Red Pepper Flakes

1 Cup Cooked Rice
-
1 Cup Shredded Monterey Jack Cheese

Salt & Pepper to Taste

Parsley for Garnish

Preheat oven to 400 degrees F.

Heat 1 Tbsp. olive oil. in a large skillet over medium-high heat. Cook onion for 5 minutes. Stir in tomato paste and garlic and cook for 1-2 minutes of until fragrant.

Add Ground Duck and cook for 5-7 minutes or until completely brown.

Stir in cooked rice, oregano, basil, salt and pepper to taste, red pepper flakes, and diced tomatoes. Cook for 5-7 more minutes to reduce.

Remove tops and cores of Bell Peppers. Place peppers in a baking dish and drizzle with remaining olive oil.

Fill each pepper to the top with your duck mix. Top with shredded Monterey Jack cheese. Cover baking dish with foil.

Bake in the oven for 20 minutes. Remove foil and bake for 10 more minutes to melt cheese.

Garnish with Parsley and serve.
