Duck Stuffed Dates

12 Oz. Ground Duck

2 Tbsp Ancho Chili Powder

1 Tbsp Cumin

1 Tbsp Smoked Paprika

1 tsp Garlic Powder

1 tsp Onion Powder

1/2 tsp dried Thyme

24 Dates, Pitted

¼ Cup Panko

4 Oz. Goat Cheese Crumbles

12 Thick Slices Of Bacon (Cut In Half Lengthwise)

3 Tbsp. Honey

1 Tbsp. Red Wine Vinegar

1 tsp Fresh Thyme

1 tsp Fresh Rosemary

1/2 tsp Salt, divided

Preheat oven to 400 degrees F.

Combine Ground Duck, ancho chili powder, cumin, paprika, garlic powder, onion powder, dried thyme, and 1/4 tsp salt to create a chorizo spiced duck sausage

In the food processor, pulse together duck sausage, panko, and goat cheese until it forms into a crumble.

Stuff each date with sausage mix then wrap each date in half slice of bacon and secure with a toothpick.

Whisk together honey, red wine vinegar, rosemary, ¼ tsp. salt, and fresh thyme to make a glaze.

Bake dates for 15 minutes in the oven. Remove from oven and brush with glaze then bake for 10 more minutes or until bacon is golden brown.
