Hardwood Smoked Duck and Pasta
A pasta dish enhanced by the flavor of smoked duck, the Hardwood Smoked Duck and Pasta recipe is a great way to explore a new taste with a bit of familiarity. Easy to make, this dish paired with a glass of wine is perfect for dinner with friends and family!
Ingredients

3 Tbsp Olive oil

12 oz Portobello Mushrooms, sliced

1 lb Artichoke Hearts, drained, cut into quarters

3 Tbsp Garlic, chopped

1 1/2 Cups White Wine

3/4 Cup Balsamic Vinegar

1 qt Duck Stock

6 Maple Leaf Farms Duck Legs, smoked (find the recipe here), skinned, sliced

1 1/2 Cups Plum Tomatoes, drained, chopped

6 Tbsp Sage, chopped

Salt, Black Pepper to taste

3 oz Unsalted Butter

3 lbs Pappardelle

Chopped Sage as needed

Sage Leaves as needed

Lemon Curls as needed
Directions

Cook the pasta according to package directions, drain, and set to the side while making the sauce.

Saute mushrooms and artichoke hearts in oil until light brown. Add garlic; cook 1 minute.

Add wine; reduce by half.

Add vinegar and duck stock; reduce by half.

Add smoked duck leg meat, tomatoes and sage; heat through.

Season with salt and pepper. Finish with butter.

Toss pasta with sauce. Garnish with sage and lemon curls. Serve immediately.
