Italian Duck Pizza
Redefine pizza with pesto sauce, eggplant, and ground duck.. Make homemade pesto or buy it prepared for an easy meal.
Ingredients

1/2 lb Maple Leaf Farms Duck Sausage (find recipe here), crumbled and cooked
(Can substitute Maple Leaf Farms Ground Duck)

1 Onion, sliced into rings

1 small Eggplant, large dice

2 Red Bell Peppers, sliced into strips

Olive Oil, as needed

Kosher Salt, to taste

Black Pepper, to taste

Oregano, as needed

4- 6" Prepared Pizza Crusts

12 oz Pesto Sauce

2 cups Mozzarella, shredded

1/2 cup Parmesan, grated

Cook duck sausage or ground duck in skillet according to package instructions.

Slice onion into rings, eggplant into large dice, and red peppers into strips. Toss with olive oil; sprinkle with salt, pepper and oregano. Bake for 20 minutes at 400°F.

Spread pesto on all crusts. Top with roasted onions, eggplant and peppers.

Blend mozzarella and Parmesan cheeses; spread evenly over vegetables on crusts. Top with cooked ground duck sausage.

Place on sheet pan and bake 10-12 minutes at 400°F until cheese is bubbly. Serve immediately.
