Pulled Duck and White Bean Salad
Tender pulled duck meat and a dressing flavored with sherry wine vinegar makes this recipe perfect for entertaining.
Ingredients
Dressing

3 Tbsp Sherry Wine Vinegar

1/3 cup Olive Oil

12 cups Spring Lettuce Mix

Vinegar & Oil Dressing

Salt & Pepper, to taste
Salad

38 oz Canned White Cannellini Beans, drained and rinsed

3/4 cup Green Olives, chopped

1 Red Pepper, roasted, peeled, seeded, and diced

1 Cucumber, peeled, seeded, and diced

1/2 cup Red Onion. diced

14 oz can Diced Tomatoes, drained

1/2 cup Fresh Parsley, chopped

Whisk together oil and vinegar dressing.
Salad

Add all ingredients except duck in a large mixing bowl. Add oil and vinegar dressing.

Toss gently and season with salt and pepper.
Plating

Place 2 cups of dressed spring lettuce on a plate. Top with 1-1/2 cups white bean salad. Top with duck. Sprinkle with Parmesan cheese.
