Smashed Potatoes with Duck Bacon and Bleu Cheese
Add duck fat, duck bacon and cheese to individually smashed small potatoes for a tasty appetizer or treat.
Ingredients

1.5 lbs Small Red Potatoes, rinsed

Salt & Pepper, to taste
Topping

4 strips Duck Bacon, cooked and diced, reserving the fat

1/2 cup Crumbled Bleu Cheese

1-2 Scallions, thinly sliced
Directions

Heat oven to 450 degrees F.

Bring large pot of water to boil and add potatoes. Boil until potatoes are tender, about 15 minutes. Drain potatoes.

While potatoes are boiling, cook the duck bacon in a medium-high heated skillet, 4 minutes per side. Remove bacon to drain, then dice. Reserve duck fat from bacon.

Coat baking sheet with reserved duck fat, and then place potatoes on baking sheet. Smash the potatoes with the bottom of a glass.

Brush potatoes with more duck fat. Season the potatoes with salt and pepper to taste.

Roast potatoes in oven until skin is golden brown (about 15 minutes).

Remove from oven; top with bleu cheese, duck bacon, and scallions.
