Smoked Duck Queso
Explore flavors south of the border with Smoked Duck Queso! This recipe inspired by Mexican Choriqueso is a crowd favorite. We use our Ground Duck and blend it with spices similar to Pork Chorizo. Then we put together a blend of white cheeses and finish it off in the smoker to create this delicious cheesy dish.
Ingredients

2 Tbsp Ancho Chili Powder

1 Tbsp Cumin

1 Tbsp Smoked Paprika

1 tsp Garlic Powder

1 tsp Onion Powder

1/2 tsp Thyme

1/2 tsp Oregano

¼ tsp Salt

1 can Tomatoes with Green Chilies

1/2 cup Heavy Cream

16 oz White Velveeta cut into large cubes

2 cups Gouda, shredded

1 cup Monterey Jack Cheese shredded

4 Cloves Garlic, minced

½ cup Fresh Cilantro

Tortilla Chips

Preheat smoker to 350 degrees F and add in wood chips/pellets.

Mix together Ancho chili powder, cumin, paprika, garlic powder, onion powder, thyme, oregano & salt. Add in Ground Duck and mix well.

Add all remaining ingredients (minus the cilantro) to a large cast iron pan or dutch oven. Place on smoker.

After 15 minutes, stir together. Cook for 30 more minutes stirring occasionally. Top with cilantro in the last few minutes. Serve with tortilla chips.
