Smoked Duck Twice Baked Potatoes
Level up your twice baked potato with duck! Duck Fat and Roast Half Duck are used in this recipe to create a delicious smoky side or appetizer.
Russet Potatoes are rubbed in Duck Fat and smoked low and slow to make them extra savory then we mix the potatoes with creamy ingredients, delicious cheese, garlic, and shredded Roast Half Duck.
Ingredients

2 Tbsp. Duck Fat

1 Roast Half Duck., Defrosted

4 Russet Potatoes

1 1 /2 Cups Cheddar, Shredded

4 Cloves Garlic, Minced

½ Cup Cream Cheese

1/3 Cup Whole Milk

2 Tbsp. Butter, Softened

1 tsp. Kosher Salt, plus salt for coating potatoes

Chives and Sour Cream for Garnish

Set Smoker to 300 Degrees F and add in wood chips/pellets.

Poke potatoes with fork on all sides. Rub potatoes with melted Duck Fat and sprinkle potatoes with a generous amount of kosher salt. Place on smoker and smoke for 1 ½ hours.

Remove potatoes from smoker and cut in half carefully. Scoop out inside of potatoes and place in a large mixing bowl.

Shred Roast Half Duck. and add half of the duck in with the potatoes in the mixing bowl. Save the rest for step 6.

Add 1 Cup cheddar, garlic, cream cheese, whole milk, butter and tsp. Kosher Salt to the bowl and mix by hand or with a mixer until smooth. Spoon filling back into potato skins.

Top potatoes with remaining shredded roast duck meat and remaining cheddar cheese. Place potatoes on a pan.

Place potato pan on smoker and smoke for an additional 25 minutes.

Remove from smoker and garnish with sliced chives and sour cream for serving.
