Southwest Duck Piadini
What's better than taco or pizza night? The perfect blend of spicy ranch sauce with roasted garlic duck breasts on a pizza crust. A meal your whole family will love.

1 quart Prepared Creamy Ranch Salad Dressing

1/2 cup Jalapeno Peppers, finely chopped

1/2 cup Cilantro, chopped
Pizza

7" Sheeted Pizza Dough, Rich's product

Cornmeal, for dusting dough

2 Tbsp Mild Salsa
-
2 oz Mozzarella Cheese, shredded

1 cup Romaine Lettuce, lightly packed

1/2 cup Tomatoes, diced

2 Tbsp Jalapeno Ranch Dressing

Duck

Score duck breast skin in 1/4" intervals, making a crisscross pattern. Over low to medium-low heat, place skin side down for approximately 8-12 minutes (or until fat is rendered and skin is crisp and brown.) Place breasts in a 400 degree oven for 3-4 minutes or until internal temperature reaches 155 degrees. Let rest 3-4 minutes.

Remove skin from duck breast and discard. Thinly slice duck breast, slicing across the grain.
Sauce

Combine ranch dressing, jalapeno and cilantro. Refrigerate until using.
Pizza

Dust bottom side of pizza dough with cornmeal. Spread salsa on dough and top with cheese. Bake at 425 degrees 6-8 minutes until crust is golden and cheese is melted.

Remove from oven and immediately top with shredded lettuce, tomato and sliced warm or cold duck breast. Drizzle with 2 tablespoons jalapeno ranch dressing. (To eat a Piadini, fold and eat out-of-hand, or with knife and fork.)
