Duck Sausage Bruschetta
These quick and easy appetizers are perfect for any occasion -- use Duck Sausage, Duck Leg Confit or Roast Half Duck meat to dress them up.
Ingredients
Duck Sausage

1 lb Maple Leaf Farms Ground Duck, thawed
(Substitution: Swap out the Ground Duck Sausage meat with a fully cooked product shredded off the bone like Duck Leg Confit or Roast Half Duck)

2 Tbsp Onion, finely chopped

1/2 tsp Sage, ground

1/2 tsp Basil

1 tsp Salt

1/2 tsp Black Pepper

1/2 tsp Thyme
Bruschetta

1/2 cup Olive Oil, divided

24 slices (1/4 inch thick) French Bread Baguette

1/4 cup Garlic, pureed

3/4 cup Feta Cheese, crumbled

1 jar (12 oz) Roasted Red Bell Peppers, drained and cut into thin strips

1 Tbsp Fresh Parsley, finely chopped

In deep bowl combine all ingredients until well blended.

Cook sausage in a skillet over medium heat until just slightly browned; stir frequently to crumble. Remove from heat and set aside.
Bruschetta

Preheat oven to 400 degrees F.

Brush 1/4 cup of the olive oil over bread slices; arrange in a single layer on cookie or baking sheets.

Spread garlic puree over slices; top with cheese, bell pepper strips and sausage. Drizzle remaining 1/4 cup oil over bruschetta.

Bake 6-8 minutes, or until hot.

Garnish with parsley, serve and enjoy.
