Southwest Tomatillo Duck Triangles
Made with fresh tomatillos, cilantro and jalapenos, this easy-to-make appetizer is perfect for a summer get-together and can complement bean quesadillas or fajitas.
Ingredients

4 cups Maple Leaf Farms Roast Half Duck Meat
(Cooked Ground Duck Meat can be substituted)

1 cup Red Onion, thinly sliced

8 Flour Tortillas, 6", cut into fourths

1 cup Tomatillos, chopped

1 cup Plum Tomatoes, chopped

4 Jalapenos, seeded, finely chopped

4 Tbsp Cilantro, minced

2 Tbsp Lime Juice

2 Garlic Cloves, minced

1/2 tsp Hot Pepper Sauce

1 tsp Cumin, ground

16 oz Cheddar Cheese, shredded

Salt, to taste

See package for preparing Maple Leaf Farms Roast Half Duck. When cool enough to handle, remove meat from bones and shred. Set meat aside.

Heat oven to 375°F. Place tortilla quarters on cookie sheet. Bake 5 minutes or until lightly toasted.

In small bowl, combine tomatillos, tomatoes, jalapeno, cilantro, lime juice, garlic, pepper sauce, cumin, cheese and salt. Mix well.

For each appetizer, spread some of the tomatillo mixture on each tortilla quarter. Top with duck meat and onion slices.

Bake 10-12 minutes or until cheese is melted.
