Maple Leaf Farms Sponsors Chef of the Year Award

The Minneapolis chapter of the American Culinary Federation (ACF) named its 2019 Chef of the Year at an awards banquet on Monday, Jan. 20. Maple Leaf Farms sponsored the award and donated duck product for the dinner that evening.

Midwest U.S. and Mexico Duck Sales Manager Albert Hernandez represented Maple Leaf Farms and congratulated Chef John Van House, corporate executive chef for Grand Casinos (Mille Lacs and Hinckley, Minnesota).

The host chef was Chris Dwyer, CEC, CCA, CE, AAC, chapter chairman and director of food and beverage at Crowne Plaza Northstar Hotel. He prepared a Duck Trio for the dinner comprised of Duck Confit Caesar Salad, Pan Seared Duck Breast, and Polenta with a Blackberry Brandy Reduction and Duck Bacon with Orange-Jalapeno Marmalade.

Dwyer was very appreciative of Hernandez and the company.

"I just wanted to send a quick thank you to you and your company for the support given to the ACF Minneapolis and for your generous food donation to the ACF Annual Awards Dinner. I greatly appreciate it and you," said Dwyer.
