Ingredients

  • 4 oz. Duck Fat

  • 4.5 lb. Yukon Gold or Yellow Potatoes

  • 1 Tbsp. Salt

  • Oil or more Duck Fat for frying

Directions

    Preheat oven to 300 degrees. Peel potatoes and thinly slice into 1/16” slices on a mandolin.

    In a large bowl, pour duck fat over potato slices and mix with salt.

    In a deep pan lined with parchment paper, layer potatoes evenly throughout pan. Pour remaining duck fat on top.

    Cover top of potato layers with parchment paper. Bake in the oven for 3 hours.

    Once pan is cool, weigh down the potato layers with heavy objects such as soup cans or bags of flour or rice. Put weighted potatoes in the fridge for 12 hours.

    Remove parchment paper and place potato layer block onto cutting board. Cut potatoes into long strips.

  • 7

    In a medium saucepan on high heat, fry potato slices in oil for 3-5 minutes or until crispy brown. Season with flaky salt and serve.
